Wash and dry the fresh produce. Peel 1 clove of garlic; using a zester or the small side of a box grater, finely grate into a paste. In a bowl, combine the yogurt, all but a pinch of the dukkah, a drizzle of olive oil, and as much of the garlic paste as you’d like. Season with salt and pepper; stir to combine. Halve the cucumbers lengthwise, then thinly slice crosswise. Halve the tomatoes. In a bowl, combine the sliced cucumbers, halved tomatoes, and a drizzle of olive oil. Season with salt and pepper; stir to combine.

2 Finish & serve your dish

On a serving dish, spread the dukkah yogurt into an even layer. Top with the seasoned vegetables (including any liquid) and a drizzle of olive oil. Serve the finished vegetables garnished with the remaining dukkah. Enjoy!
