Prepare the ingredients & make the base
Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the spinach. In a bowl, whisk together the cream (shaking the packet before opening), tomato paste, romesco sauce, and 1/2 cup of water; season with salt and pepper. In the tray, combine the spinach, gnocchi, and creamy romesco sauce. Season with salt and pepper; stir to thoroughly combine.

Bake the tray & serve your dish
Add the sausage in an even layer (tearing into bite-sized pieces before adding). Season with 1/4 of the spice blend (you will have extra). Tightly cover the tray with foil; place directly onto an oven rack and bake 30 to 35 minutes, or until the sausage is cooked through. Remove from the oven. Carefully remove the foil; stir to combine. Serve the baked tray garnished with the parmesan. Enjoy!
