Instructions

step 1
Prepare the ingredients
Wash and dry the fresh produce. Halve, peel, and thinly slice the shallot. Thinly slice the mushrooms. Cut off and discard the stem of the pepper. Halve lengthwise; remove the ribs and seeds, then thinly slice crosswise. Thoroughly wash your hands immediately after handling.

step 2
Cook the sausage & vegetables
In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the sausage. Cook, stirring frequently and breaking the meat apart with a spoon, 3 to 4 minutes, or until lightly browned. Add the sliced shallot, sliced mushrooms, and sliced pepper; season with salt and pepper. Cook, without stirring, 2 to 3 minutes, or until lightly browned.

step 3
Finish the pasta & serve your dish
Add the tomato paste; season with salt and pepper. Cook, stirring constantly, 30 seconds to 1 minute, or until thoroughly combined. Add the pasta and 1/4 cup of water (carefully, as the liquid may splatter). Cook, stirring frequently, 1 to 2 minutes, or until the sauce is slightly thickened, the pasta is heated through, and the sausage is cooked through. Turn off the heat. Stir in the crème fraîche until combined. Taste, then season with salt and pepper if desired. Serve the finished pasta garnished with the parmesan. Enjoy!
