Prepare the ingredients

Preheat the oven to 400°F. Wash and dry the peppers. In a bowl, combine the sausage and breadcrumbs. Gently mix to combine. Form the mixture into two 1/2-inch-thick patties; transfer to one side of the tray. Transfer the peppers to the other side of the tray; drizzle with olive oil and season with salt and pepper. Toss to coat and arrange in an even layer.

Preheat the oven to 400°F. Wash and dry the peppers. In a bowl, combine the sausage and breadcrumbs. Gently mix to combine. Form the mixture into two 1/2-inch-thick patties; transfer to one side of the tray. Transfer the peppers to the other side of the tray; drizzle with olive oil and season with salt and pepper. Toss to coat and arrange in an even layer.

Bake, uncovered, 15 minutes. Leaving the oven on, remove from the oven. Carefully flip the partially cooked patties. Evenly top with half the cheddar and monterey jack (you will have extra). Return to the oven and bake 5 to 7 minutes, or until the peppers are tender when pierced with a fork, the cheese is melted, and the patties are cooked through.* Remove from the oven. 

*The USDA recommends a minimum safe cooking temperature of 160°F for pork.

Meanwhile, if necessary, halve the buns. Wrap the halved buns in foil and place directly onto an oven rack; warm 5 to 7 minutes, or until heated through. Remove from the oven. In a bowl, combine the mayonnaise and fig spread. Assemble the burgers using the warmed buns, fig mayo, cooked patties, and crispy onions. Serve the burgers with the roasted peppers. Enjoy!
