We’re serving them with a bright, refreshing side of Napa cabbage slaw that we’ve marinated in fresh lime juice while the burgers cook.

  • 6 oz Carrots
  • 2 Scallions
  • 1 Lime
  • 2 Tbsps Mayonnaise
  • 1 oz Sliced Pickled Jalapeño Pepper
  • ¼ cup Panko Breadcrumbs
  • 1 Tbsp Barbecue Spice Blend (Smoked Paprika, Sweet Paprika, Ground Fennel Seeds, Ground Coriander, Garlic Powder, & Light Brown Sugar)
  • ½ lb Napa Cabbage

Prepare the ingredients:

Wash and dry the fresh produce. Cut off and discard the root ends of the scallions; thinly slice. Peel the carrots; grate on the large side of a box grater. Halve the lime crosswise. Halve the buns. Roughly chop the pepper; thoroughly wash your hands and cutting board immediately after handling the pepper.

STOVE: Cut out and discard the core of the cabbage; thinly slice the leaves.
GRILL: Preheat your grill to maintain a temperature of 450-500°F. Oil the grill grates. Keep the cabbage whole.

Make the spicy mayonnaise:

In a bowl, combine the mayonnaise and as much of the chopped pepper as you’d like, depending on how spicy you’d like the dish to be. Season with salt and pepper. 

Make the slaw:

STOVE: In a large bowl, combine the sliced cabbage and scallions, grated carrots, the juice of both lime halves, and a drizzle of olive oil. Season with salt and pepper. Set aside to marinate, stirring occasionally, at least 10 minutes. Season with salt and pepper to taste.  
GRILL: Place the cabbage in a bowl. Drizzle with olive oil and season with salt and pepper. Turn to coat. Reserving the bowl, grill the seasoned cabbage, turning occasionally, 6 to 7 minutes, or until lightly charred. Transfer to a cutting board and thinly slice, discarding the core. Return to the reserved bowl. Add the sliced scallions, grated carrots, the juice of both lime halves, and a drizzle of olive oil. Season with salt and pepper. Stir to combine. Set aside to marinate, stirring occasionally, at least 10 minutes. Season with salt and pepper to taste. 

Form & cook the patties:

Place the beef, breadcrumbs, and spice blend in a large bowl. Season with salt and pepper. Gently mix to combine. Using your hands, form the mixture into two 1/2-inch-thick patties. Transfer to a plate.

STOVE: In a medium pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the patties and cook 4 to 5 minutes per side, or until browned and cooked through. Transfer to a plate. Rinse and wipe out the pan.
GRILL: Lightly oil the patties and grill 6 to 7 minutes per side, or until browned and cooked through. Transfer to a plate.

Toast the buns & serve your dish:

STOVE: Heat the same, dry pan on medium-high until hot. Add the buns, cut side down and cook 30 seconds to 1 minute, or until lightly browned. Transfer to a work surface.
GRILL: Grill the buns, cut side down, 30 seconds to 1 minute, or until lightly browned. Transfer to a work surface. 

Assemble the burgers using the toasted buns, spicy mayonnaise, and cooked patties. Serve with the slaw on the side. Enjoy!
