Instructions

step 1
Prepare the ingredients
Preheat the oven to 450°F. Wash and dry the fresh produce. Lightly coat the tray(s) with olive oil. In the prepared tray(s), combine the spinach, tomatoes, red pepper pesto, garlic pesto, tomato paste, crème fraîche, and gnocchi. Season with salt and pepper; stir to combine. Add 1/4 cup of water to the tray (or to each tray for 4 servings); stir thoroughly to combine.

Bake the tray & serve your dish
Add the pork (tearing into bite-sized pieces before adding) in an even layer. Tightly cover the tray(s) with foil and bake 28 to 30 minutes, or until the gnocchi is tender and the pork is cooked through. Remove from the oven. Carefully remove the foil and stir to combine. Let stand at least 2 minutes. Serve the baked tray(s) garnished with the parmesan. Enjoy!
