  • 2 15.5-Oz Cans Pinto Beans
  • 8 Flour Tortillas
  • ½ cup Sour Cream
  • ⅓ cup Pepper Sofrito
  • ⅔ cup Guajillo Chile Pepper Sauce
  • ½ lb Grape Tomatoes
  • 2 Single-Use Aluminum Trays
  • ¼ cup Grated Cotija Cheese

Preheat the oven to 450°F. Wash and dry the tomatoes. Drain and rinse the beans. Between the two trays, evenly divide the drained beans, guajillo sauce, pepper sofrito, and tomatoes. Season with salt and pepper if desired; stir to thoroughly combine.

2 Add the sausage & bake the trays

Add the sausage (tearing into bite-sized pieces before adding) in an even layer. Tightly cover the trays with foil; place directly onto an oven rack and bake 28 to 30 minutes, or until the sausage is cooked through. Remove from the oven; carefully remove the foil.

Once the trays have baked about 15 minutes, wrap the tortillas in foil and place directly onto an oven rack; warm 7 to 9 minutes, or until heated through. Transfer to a work surface and carefully unwrap. Serve the baked trays with the warmed tortillas. Top with the sour cream and cotija. Enjoy!
