Preheat the oven to 450°F. Wash and dry the broccoli florets. Add the broccoli florets to one side of the tray. Drizzle with olive oil and season with salt, pepper, and the spice blend. Stir to coat. Add the caramelized onions and peppers to the other side of the tray.
Evenly top the onions and peppers with the sausage (tearing into bite-sized pieces before adding). Bake, uncovered, 15 minutes. Leaving the oven on, remove from the oven.
Evenly top the partially cooked sausage with the cheese (tearing into bite sized pieces before adding). Return to the oven and bake 4 to 5 minutes, or until the cheese is melted and the sausage is cooked through.
Meanwhile, wrap the buns in foil and place directly onto an oven rack; warm 4 to 5 minutes, or until heated through. Assemble the sandwiches using the warmed buns and baked sausage, peppers, and onions. Serve the sandwiches with the baked broccoli. Enjoy!
