Mexican Spice Blend (Ancho Chile Powder, Smoked Paprika, Garlic Powder, Ground Cumin & Dried Mexican Oregano)

Shredded Cheddar & Monterey Jack Cheese Blend

Sliced Pickled Jalapeño Peppers

Prepare the ingredients & make the base
Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the spinach. Drain and rinse the beans. In the tray, combine the spinach, drained beans, spice blend, and guajillo sauce. Stir to combine. Add 1/4 cup of water to the tray. Season with salt and pepper; stir to thoroughly combine.

Bake the tray & serve your dish
Add the beef in an even layer (tearing into bite-sized pieces before adding); season with salt and pepper. Tightly cover the tray with foil and bake 28 to 30 minutes, or until thickened and the beef is cooked through. Remove from the oven; carefully remove the foil. Let stand at least 3 minutes before serving. Serve the baked tray topped with the cheese, sour cream, and as much of the pepper as you'd like, depending on how spicy you'd like the dish to be. Enjoy!
