Prepare the baking dish

Remove the noodles from the refrigerator to bring to room temperature. Preheat the oven to 450°F. Wash and dry the fresh produce. Tear the bok choy into bite-sized pieces. Using your hands, carefully separate the noodles. In a small baking dish (or large for 4 servings), combine the bok choy pieces, noodles, broth concentrate, mirin, soy-miso sauce, and 1/3 cup of water (or 2/3 cup for 4 servings). Stir to thoroughly combine. Season with salt and pepper if desired.

Add the beef & bake your dish

Add the beef (tearing into bite-sized pieces before adding) in an even layer. Season with salt and pepper. Tightly cover with foil and bake 18 minutes. Carefully remove the foil. Continue to bake 5 to 7 minutes, or until the beef is cooked through. Remove from the oven. Add the kimchi; stir to combine. Let stand for at least 3 minutes.

Meanwhile, in a bowl, combine the sesame dressing and as much of the gochujang as you'd like, depending on how spicy you'd like the dish to be. Taste, then season with salt and pepper if desired. Serve the baked beef and noodles drizzled with the sauce. Garnish with the sesame seeds. Enjoy!
