Pat the shrimp dry with paper towels; season with salt and pepper. Wash and dry the fresh produce. Thinly slice the mushrooms. If desired, remove the tough strings from the snow peas. Crack the eggs into a bowl; season with salt and pepper. Beat until smooth. In a large pan (nonstick, if you have one), heat the sautéed aromatics on medium-high until hot. Add the sliced mushrooms and snow peas; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until lightly browned.
Add the seasoned shrimp, rice, kimchi, soy sauce (carefully, as the liquid may splatter), and as much of the gochujang as you'd like, depending on how spicy you'd like the dish to be. Cook, stirring frequently and breaking the rice apart with a spoon, 3 to 5 minutes, or until thoroughly combined, the rice is heated through, and the shrimp are opaque and cooked through.
Using a spoon, move the fried rice to one side of the pan. Add a drizzle of olive oil to the other side, then add the beaten eggs. Cook, constantly stirring the eggs, 30 seconds to 1 minute, or until cooked through. Stir to thoroughly combine. Turn off the heat. Serve the finished fried rice garnished with the sesame seeds.
