Wash and dry the fresh produce. In a bowl, combine the cabbage and carrots and ranch dressing; season with salt and pepper. Stir to coat. Taste, then season with salt and pepper if desired. In a medium bowl, whisk together the honey, as much of the buffalo sauce as you’d like and up to half the spice blend, depending on how spicy you’d like the dish to be.

In a medium bowl, whisk together the honey, as much of the buffalo sauce as you’d like and up to half the spice blend, depending on how spicy you’d like the dish to be.

Coat, cook, & dress the chicken

Pat the chicken dry with paper towels; place in a bowl. Season with salt, pepper, and as much of the remaining spice blend as you’d like. Add the cornstarch; toss to coat. In the same pan, heat a thin layer of oil on medium-high. Once the oil is hot enough that a pinch of cornstarch sizzles immediately when added, add the coated chicken in an even layer (discarding any excess cornstarch). Cook, without stirring, 3 to 4 minutes, or until lightly browned. Continue to cook, stirring frequently, 3 to 4 minutes, or until browned and cooked through. Discarding any excess oil from the pan, carefully transfer the cooked chicken to the bowl of honey-buffalo sauce; stir to coat. Taste, then season with salt and pepper if desired.

Assemble the wraps & serve your dish

Wrap the tortillas in a damp paper towel and microwave on high 30 seconds to 1 minute, or until heated through. Place the warmed tortillas on a work surface. Evenly divide the ranch slaw and dressed chicken among the center of the bottom half of each tortilla (the half that is closest to you). Fold the three adjacent sides over the filling, holding them in place so the filling is covered. Roll away from you, tightly tucking in the sides as you roll into a wrap. Halve the wraps on an angle, seam side down. Enjoy!
