  • 2 Pocketless Pitas
  • 1½ oz Feta Cheese
  • 1 bunch Mint
  • 1 oz Sliced Roasted Red Peppers
  • 2 Tbsps Dried Currants
  • 1½ Tbsps Red Harissa Paste
  • 1 8-Oz Can Tomato Sauce
  • ½ cup Tzatziki (Cucumber-Yogurt Sauce)
  • 1 Tbsp Za'atar Seasoning (Sumac, Aleppo Pepper, Sesame Seeds, Salt, Thyme & Whole Oregano)
  • 1 Single-Use Aluminum Tray
Make the base

Preheat the oven to 450°F. In the tray, combine the harissa paste, tomato sauce, currants, peppers, and half the za'atar. Season with salt and pepper; stir to thoroughly combine.

Add the beef & bake the tray

Add the beef in an even layer (tearing into bite-sized pieces before adding). Season with salt and pepper. Bake, uncovered, 12 to 14 minutes, or until the beef is cooked through. Remove from the oven. Carefully stir to combine.

Meanwhile, place the pitas on a piece of foil. Drizzle with olive oil; season with the remaining za'atar. Stack the pitas and wrap them in the foil. Place directly onto an oven rack; warm 5 to 7 minutes, or until heated through. Transfer to a work surface and carefully unwrap. Wash and dry the mint; pick the leaves off the stems. Serve the baked tray with the za'atar pitas. Top with the tzatziki, feta (crumbling before adding), and mint leaves (tearing just before adding). Enjoy!
