
Creamy Scallion Mashed Potatoes
with Cheddar & Monterey Jack

Classic mashed potatoes get an aromatic twist thanks to fresh scallions mixed in alongside melty cheddar, monterey jack, mascarpone, and cream.

2 oz
Shredded Cheddar & Monterey Jack Cheese Blend
¼ cup
Cream
2 each
Scallions
2 tbsp
Mascarpone Cheese

Instructions
step 1
Prepare the potato ingredients
Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high. Wash and dry the fresh produce. Medium dice the potatoes. Thinly slice the scallions.

Cook & mash the potatoes
Add the diced potatoes to the pot of boiling water. Cook 16 to 20 minutes, or until tender when pierced with a fork. Turn off the heat. Drain thoroughly and return to the pot. Add the sliced scallions, cheddar and monterey jack, mascarpone and cream (shaking the packet before opening). Using a fork or potato masher, mash to your desired consistency. Taste, then season with salt and pepper if desired. Serve the mashed potatoes. Enjoy!
