Instructions
Prepare the ingredients & make the dressing
Wash and dry the fresh produce. Halve the cucumbers lengthwise, thinly slice crosswise. Place in a small bowl; add the mirin and set aside to marinate, stirring occasionally, at least 10 minutes. Roughly chop the lettuce. Roughly chop the cilantro leaves and stems. Halve the lime crosswise. In a large bowl, combine the sesame dressing and the juice of 1 lime half (you will have extra).
Make the salad & serve your dish
To the bowl of dressing, add the chopped lettuce, cabbage and carrots, chopped cilantro, and marinated cucumber (including the liquid), toss to combine. Taste, then season with salt and pepper if desired. Serve the salad garnished with the sesame seeds and cashews. Enjoy!
