Prepare the ingredients & make the base

Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the spinach. In the tray, combine the spinach, gnocchi, sautéed aromatics, soy-miso sauce, and as much of the gochujang as you'd like, depending on how spicy you'd like the dish to be. Stir to combine. Add 2 teaspoons of water to the tray. Season with salt and pepper if desired; stir to thoroughly combine.

Add the pork in an even layer (tearing into bite-sized pieces before adding). Season with half the spice blend (you will have extra). Tightly cover the tray with foil and bake 20 to 22 minutes, or until the pork is cooked through. Remove from the oven.

Add the kimchi and crème fraîche; stir to thoroughly combine. Taste, then season with salt and pepper if desired. Serve the finished tray garnished with the sesame seeds. Enjoy!
