Prepare the ingredients & make the base
Preheat the oven to 450°F. Wash and dry the fresh produce. In the tray(s), combine the gnocchi, tomato paste, tomatoes, pepper sofrito, and cream (shaking the packet before opening). Add 1/2 cup of water to the tray (or to each tray for 4 servings). Season with salt and pepper; stir to thoroughly combine.

Add the chorizo (tearing into bite-sized pieces before adding) in an even layer. Tightly cover the tray(s) with foil and bake 30 minutes. Remove from the oven. Let stand at least 3 minutes before serving. Serve the baked tray(s) garnished with the parmesan. Enjoy!
