They're finished with a dusting of spiced sugar and a dipping sauce inspired by classic cannoli cream, which features ricotta, mascarpone, and more.

In a bowl, combine the ricotta, mascarpone, orange marmalade, and maple syrup. Whisk to thoroughly combine. In a separate bowl, combine the sugar and warming spices.

Place the tortillas on a work surface. Top one half of each tortilla with the chocolate chips; fold the tortillas in half over the filling.

In a large pan (nonstick, if you have one), heat the butter on medium until melted. Add the quesadillas. Cook 3 to 5 minutes on the first side, or until lightly browned. Flip the quesadillas and carefully top with half the spiced sugar. Continue to cook 3 to 5 minutes, or until lightly browned and the chocolate is melted. Carefully transfer to a cutting board, plain side up, and top with the remaining spiced sugar. Cut into equal-sized wedges. Serve the finished quesadillas with the cannoli cream. Enjoy!
