    • 4 oz Grape Tomatoes
    • 2 oz Shredded Cheddar & Monterey Jack Cheese Blend
    • ¼ cup Cilantro Sauce
    • ⅓ cup Guajillo Chile Pepper Sauce
    • ¼ cup Sour Cream
    • 3 Tbsps Pepper Sofrito
    • 1 oz Sliced Pickled Jalapeño Peppers
    • 1 Tbsp Smoky Spice Blend (Smoked Paprika, Sweet Paprika, Ground Yellow Mustard, Garlic Powder & Onion Powder)
    Prepare the ingredients & start the pork
    1 Prepare the ingredients & start the pork

    Wash, dry, and halve the tomatoes. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the pulled pork, guajillo sauce (carefully, as the liquid may splatter), and 1 tablespoon of water; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 2 to 3 minutes, or until combined and heated through. Transfer to a bowl. Wipe out the pan.

    2 Make the skillet

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the potatoes, halved tomatoes, pepper sofrito, and spice blend; season with salt and pepper. Cook, stirring occasionally, 5 to 6 minutes, or until combined and lightly browned. Add the guajillo pork; stir to thoroughly combine. Top with the cheddar and monterey jack. Cover with foil and cook 1 to 2 minutes, or until the cheese is melted. Turn off the heat.
