Ingredients
2 each
Boneless, Skinless Chicken Breasts
16 oz
Sweet Potato
6 oz
Green Beans
2 oz
Shredded Cheddar & Monterey Jack Cheese Blend
1 oz
Garlic & Herb Flavored Butter
1 tbsp
Italian Seasoning (Whole Dried Basil, Sage, Oregano, Savory, Rosemary, Thyme & Marjoram)
2 tbsp
Mayonnaise
1 ½ tsp
Calabrian Chile Paste
1 each
Single-Use Aluminum Tray
Note: Measurements are for 2 serving recipes.

Instructions

step 1
Prepare the ingredients
Remove the butter from the refrigerator to soften. Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the fresh produce. Snap off and discard any stem ends from the green beans. Add the green beans to the tray. Drizzle with olive oil and season with salt and pepper; toss to thoroughly coat. Arrange in an even layer on one side of the tray.

step 2
Bake the chicken & green beans
Pat the chicken dry with paper towels. Season on both sides with salt, pepper, and enough of the Italian seasoning to coat (you may have extra). Transfer to the other side of the tray. Evenly top with the cheddar and monterey jack. Place directly onto an oven rack and bake, uncovered, 20 to 22 minutes, or until the green beans are tender when pierced with a fork and the chicken is cooked through.* Remove from the oven.

step 3
Finish & serve your dish
Meanwhile, using a fork, prick a few holes in each sweet potato. Wrap each sweet potato in a damp paper towel. Microwave on high 9 to 12 minutes, or until tender when pierced with a fork. Transfer to a work surface and carefully unwrap. Halve lengthwise; season with salt and pepper. In a bowl, combine the mayonnaise and as much of the chile paste as you'd like, depending on how spicy you'd like the dish to be. Serve the baked chicken and green beans with the cooked sweet potatoes. Top the chicken with the Calabrian mayo. Top the sweet potatoes with the softened butter. Enjoy!
