Grape Tomatoes

Small Baguettes
1 tbsp
Everything Bagel Seasoning (Poppy Seeds, White Sesame Seeds, Black Sesame Seeds, Dried Minced Garlic, Dried Minced Onion & Coarse Salt)
4 tbsp
Mayonnaise
¼ cup
Grated Parmesan Cheese
1 tbsp
Red Wine Vinegar
Note: Measurements are for 2 serving recipes.

Instructions

step 1
Cook the bacon
Preheat the oven to 400°F. Line a sheet pan with foil. Place the bacon on the foil; arrange in an even layer. Roast 12 to 16 minutes, or until cooked through and crispy. Transfer to a paper towel-lined plate. When cool enough to handle, crumble into bite-sized pieces.

Make the croutons
Meanwhile, large dice the baguette(s). Transfer to a separate sheet pan; drizzle with olive oil and season with salt, pepper, and the everything bagel seasoning. Toss to coat; arrange in an even layer. Toast in the oven 8 to 12 minutes, or until browned and crispy. Remove from the oven and let cool.

Make the salad & serve your dish
Meanwhile, wash and dry the fresh produce. Halve the tomatoes. Halve and pit the avocado(s). Using a spoon, remove the avocado from the skin, then medium dice. In a large bowl, combine the mayonnaise, parmesan, vinegar, and 1 tablespoon of water (or 2 tablespoons for 4 servings). Season with salt and pepper. Just before serving, to the bowl of dressing, add the croutons, spinach, arugula, crumbled bacon, halved tomatoes, and diced avocado(s). Toss to combine. Taste, then season with salt and pepper if desired. Enjoy!
