This vibrant salad uses a rich, creamy sesame-honey dressing to bring together a crisp mix of cucumbers, bell pepper, spinach, and arugula. You'll top it off with slices of smooth avocado, plus a sprinkle of everything bagel seasoning, whose subtle aromatic flavor and crunchy seeds are an unexpectedly perfect fit.

Wash and dry the fresh produce. Small dice the cucumbers; place in a bowl. Add the mirin; stir to coat. Set aside to marinate, stirring occasionally, at least 10 minutes. Cut off and discard the stem of the pepper. Quarter lengthwise; remove the ribs and seeds, then thinly slice crosswise. Halve and pit the avocado; using a spoon, remove the avocado from the skin, then thinly slice. In a large bowl, whisk together the sesame dressing, honey, and vinegar; season with salt and pepper.
To the bowl of dressing, add the spinach, arugula, marinated cucumbers (including the liquid), and sliced pepper; toss to combine. Taste, then season with salt and pepper if desired. Serve the salad topped with the sliced avocado. Garnish with the everything bagel seasoning. Enjoy!
