Gavin Chanin was under 21 when, as an art student at UCLA, he landed a summer job at a Santa Barbara winery. Jammy, high-alcohol Pinots were all the rage, but Gavin quickly set about creating a more balanced, elegant style—that no one believed could catch on. Yet a few years later, he earned Winemaker of the Year honors from Food & Wine and a spot on the Forbes 30 Under 30 list. Now just 31, Gavin’s the Santa Barbara winemaker even the Pinot virtuosos try to emulate.

Pairing

Classic in style, these reds are equal parts power and finesse. Richer Pinots and Merlot-based Bordeaux reds, with their mix of red- and black-fruit flavors, can hold their own with just about any meat. The most delightful pairing to remember: Pork always loves this kind of Pinot Noir.

Sunny Santa Barbara County is just a short drive north from Los Angeles, but breezes and fog rolling in from the Pacific make the region cooler than Sonoma, which is north of San Francisco. So Santa Barbara is paradise for Pinot Noir grapes, which develop intense fruit flavors under the sunshine and retain freshness from the cool air.

In cool climates, grapes can ripen later in the fall. “Hang time” helps grapes develop fuller fruit flavors, but harvesting early can result in a wine with more complexity.
