    Place an oven rack in the center of the oven; preheat to 425°F. Wash and dry the fresh produce. Quarter the zucchini lengthwise, then thinly slice crosswise. Peel and roughly chop 2 cloves of garlic. Halve the tomatoes. Grate the cheese on the large side of a box grater.

Add the chopped garlic, halved tomatoes, and as much of the red pepper flakes as you'd like, depending on how spicy you'd like the dish to be. Cook, stirring occasionally, 1 to 2 minutes, or until the vegetables are browned and softened and the pancetta is cooked through. Turn off the heat. Taste, then season with salt and pepper if desired.

Bake 18 to 20 minutes, or until the crust is browned and the filling is set and cooked through. Remove from the oven and let stand at least 2 minutes before serving.
