This easy salad is packed with flavor from sweet summer peach, tangy goat cheese, and a punchy dressing made with sour cherry spread, dijon mustard, and sherry vinegar.

Wash and dry the fresh produce. Halve the tomatoes. Halve the cucumbers lengthwise, then thinly slice crosswise. Roughly chop the pistachios. In a bowl, whisk together the tahini, honey, half the vinegar (you will have extra), and up to 1 tablespoon of water; season with salt and pepper.
In a large bowl, combine the spinach, arugula, halved tomatoes, sliced cucumbers, and feta (crumbling before adding). Drizzle with olive oil and season with salt and pepper; toss to combine. Serve the salad drizzled with the dressing. Garnish with the chopped pistachios. Enjoy!
