  • 2 oz Sliced Roasted Red Peppers
  • 1 tsp Baking Powder
  • ⅔ cup All-Purpose Flour
  • 2 Scallions

1 Prepare the ingredients
  • Place an oven rack in the center of the oven; preheat to 350°F. Wash and dry the fresh produce. Thinly slice the scallions. Roughly chop the spinach. Roughly chop the peppers.

2 Make the batter
  • Lightly grease 8 rounds of a muffin tin (or line with cupcake liners). Crack the eggs into a bowl; season with salt and pepper and beat until smooth. Add the sliced scallions, chopped spinach, chopped peppers, and cheese (crumbling before adding). Stir to thoroughly combine. Add the flour and baking powder; stir until thoroughly combined and no white streaks remain.

3 Bake the egg bites & serve your dish
  • Divide the batter among the prepared tins. Bake 17 to 19 minutes, or until cooked through. Remove from the oven and let stand at least 2 minutes before serving. Enjoy!
