    • 18 oz Boneless Chicken Breast Pieces
    • 1 cup Long Grain White Rice
    • ½ lb Snow Peas
    • 3 Tbsps Sesame Dressing
    • 2 Tbsps Hoisin Sauce
    • 3 oz Radishes
    • 2 Scallions
    • 1 Tbsp Mirin (Salted Cooking Wine)

    1 Cook the rice

Carefully rinse the rice (sifting through for any impurities). Drain thoroughly. In a medium pot, combine the rice, a big pinch of salt, half the sautéed aromatics, and 2 cups of water. Heat to boiling on high. Once boiling, reduce the heat to low. Cover and cook, without stirring, 13 to 15 minutes, or until the water has been absorbed and the rice is tender. Turn off the heat and fluff with a fork.

Meanwhile, wash and dry the fresh produce. Halve the snow peas crosswise (removing the tough strings if desired). Roughly chop the peanuts. Halve the radishes lengthwise, then thinly slice crosswise. Thinly slice the scallions. In a bowl, combine the sliced radishes, sliced scallions, and mirin. Season with salt and pepper; stir to combine. Set aside to marinate, stirring occasionally, at least 10 minutes. Taste, then season with salt and pepper if desired.

Cook the chicken & snow peas
3 Cook the chicken & snow peas

Pat the chicken dry with paper towels; season with salt and pepper. In a large pan (nonstick, if you have one), heat the remaining sautéed aromatics on medium-high until hot. Add the seasoned chicken in an even layer. Cook, without stirring, 3 to 4 minutes, or until lightly browned. Continue to cook, stirring occasionally, 2 to 3 minutes. Add the soy sauce (carefully, as the liquid may splatter) and halved peas. Cook, stirring frequently, 1 to 2 minutes, or until combined and the chicken is cooked through. Turn off the heat. Taste, then season with salt and pepper if desired.
