For an unforgettable lunch, you'll fill soft tortillas with rich prosciutto, tangy peppers and artichokes, arugula, hot honey, and a bright, creamy mozzarella mixture that's reminiscent of burrata cheese.

Wash and dry the fresh produce. Remove the plastic lining between the slices of prosciutto; tear into bite-sized pieces. Using a zester or the small side of a box grater, finely grate the lemon to get 1 teaspoon of zest. Quarter and deseed the lemon. In a bowl, combine the honey, 1/2 teaspoon of warm water, and as much of the red pepper flakes as you’d like, depending on how spicy you’d like the dish to be. Place the arugula in a separate bowl. Add the juice of 2 lemon wedges (you will have extra) and a drizzle of olive oil; season with salt and pepper. Toss to coat.
Tear the mozzarella into bite-sized pieces. In a bowl, combine the mozzarella pieces, sour cream, and lemon zest. Season with salt and pepper.
Wrap the tortillas in a damp paper towel and microwave on high 1 minute, or until heated through. Place the warmed tortillas on a work surface. Between the center of the bottom half of each tortilla (the side that is closest to you), evenly divide the prosciutto pieces, creamy mozzarella, artichokes, peppers, dressed arugula, and hot honey. Fold the three adjacent sides over the filling, holding them in place so that the filling is covered. Roll away from you, tightly tucking in the sides as you roll until the wrap is seam-side down. Halve the wraps on an angle. Enjoy!
