From the Test Kitchen

We’re elevating the classic cheeseburger by topping our juicy beef patties with a spin on pimento cheese—a beloved Southern spread that, at its simplest, features a combo of grated cheese, mayonnaise, and pickled peppers. It’s the perfect partner for a side of roasted potatoes coated with a blend of our go-to savory seasonings and a side of creamy ranch.

  • ¼ cup Mayonnaise
  • 1¼ lbs Potatoes
  • 1 oz Pickled Peppadew Peppers

Prepare & roast the potatoes
1 Prepare & roast the potatoes

Place an oven rack in the center of the oven; preheat to 450°F. Line a sheet pan with foil. Wash and dry the potatoes; halve lengthwise, then cut crosswise into 1/2-inch pieces. Place in a bowl. Drizzle with olive oil and season with salt, pepper, and half the spice blend. Stir to coat. Transfer to the sheet pan and arrange in an even layer. Roast 21 to 23 minutes, or until browned and tender when pierced with a fork. Remove from the oven.

Meanwhile, place the beef in a bowl; season with salt and pepper. Gently mix to incorporate. Form the mixture into four 1/2-inch-thick patties. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the patties. Cook 4 to 5 minutes per side (flipping carefully, as the oil may splatter), or until browned and cooked through.* Leaving any browned bits (or fond) in the pan, transfer to a plate. Loosely cover with foil to keep warm.

*The USDA recommends a minimum safe cooking temperature of 160°F for beef.
