    Prepare the ingredients
    1 Prepare the ingredients
    Wash and dry the fresh produce. Cut off and discard the stem of the pepper. Halve lengthwise; remove the ribs and seeds, then thinly slice crosswise. Thoroughly wash your hands and knife immediately after handling. Pat the sweet potatoes dry with paper towels. In a bowl, combine the mascarpone, feta (crumbling before adding), a drizzle of olive oil, and as much of the chile paste as you'd like, depending on how spicy you'd like the dish to be. Using a fork, mash to combine.
    2 Start the hash

    In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the pancetta, sliced pepper, and prepared sweet potatoes; season with salt and pepper. Cook, stirring occasionally, 4 to 5 minutes, or until the vegetables are lightly browned and the pancetta is cooked through. Add the spinach; season with salt and pepper. Cook, stirring frequently, 30 seconds to 1 minute, or until slightly wilted.

    Using a spoon, create 2 wells in the center of the hash. Carefully crack an egg into each well; season with salt and pepper. Loosely cover the pan with foil and cook 5 to 7 minutes, or until the egg whites are set and the yolks are cooked to your desired degree of doneness. Turn off the heat. Serve the finished hash topped with the spicy feta. Enjoy!
