  • 2 Tbsps Sliced Roasted Almonds
  • 2 Tbsps Maple Syrup

  • 2 Tbsps Mascarpone Cheese
  • 1 oz Sweetened Toasted Coconut Chips
  • 1 tsp Warming Spices (Cinnamon, Ginger, Cardamom & Allspice)

Grease a large baking dish. Tear the buns into pieces; place in the baking dish. In a bowl, whisk together the pastry cream, eggs, cream (shaking the packet before opening), warming spices, half the sugar (you will have extra), 1/4 cup of water, and a pinch of salt until combined.

2 Assemble the French toast

Carefully pour the cream mixture over the bun pieces; press the buns gently to absorb. Tightly cover and refrigerate overnight, or at least 2 hours.

3 Bake the French toast

Preheat the oven to 350°F. Remove the cover from the baking dish. Stir the French toast to recombine and arrange in an even layer. Sprinkle the almonds and coconut chips evenly over the top. Cover with foil. Bake 30 minutes. Carefully remove the foil. Continue to bake, uncovered, 15 to 25 minutes, or until puffed, golden, and set in the center. Remove from the oven. Let stand at least 10 minutes before serving.

In a small bowl, combine the mascarpone and 1 tablespoon of water; stir to thoroughly combine. In a separate bowl, melt the butter in the microwave. Stir in the maple syrup until combined. Serve the baked French toast topped with the mascarpone and maple butter. Enjoy!
