    • 3 Tbsps Romesco Sauce (Contains Almonds)
    • 1½ Tbsps Golden Raisins
    • 2 Tbsps Tomato Paste
    • 3 oz Baby Spinach
    • 1 pinch Saffron
    • 2 Tbsps Crème Fraîche
    • 2 Tbsps Sliced Roasted Almonds
    • 4 oz Grape Tomatoes
    • 1 Tbsp Verjus Rouge

    Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the fresh produce. In the tray, combine the spinach, couscous, tomatoes, tomato paste, saffron, raisins, and verjus. Stir to combine. Add 1/3 cup of water to the tray. Season with salt and pepper; stir to thoroughly combine.

    Add the turkey (tearing into bite-sized pieces before adding) in an even layer; season with salt and pepper. Tightly cover the tray with foil and bake 20 to 22 minutes, or until the couscous is tender and the turkey is cooked through. Remove from the oven. Carefully remove the foil. Stir to combine.
