  • 1 cup Chicken Bone Broth
  • ¼ cup Grated Parmesan Cheese
  • 1 Tbsp Italian Seasoning (Whole Dried Basil, Sage, Oregano, Savory, Rosemary, Thyme & Marjoram)

1 Cook the pasta

Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high. Once boiling, add the pasta. Cook, stirring occasionally, 8 to 10 minutes, or until tender. Turn off the heat. Reserving 1/2 cup of the pasta cooking water, drain thoroughly. Transfer the cooked pasta to a bowl; add a drizzle of olive oil and stir to coat. Rinse and wipe out the pot.

Meanwhile, wash and dry the fresh produce. Halve, peel, and small dice the onion. In a bowl, combine the ricotta, half the parmesan, a drizzle of olive oil, and as much of the chile paste as you’d like, depending on how spicy you’d like the dish to be; season with salt and pepper.

In the same pot, heat a drizzle of olive oil on medium-high until hot. Add the diced onion, garlic pesto, and Italian seasoning. Cook, stirring frequently, 3 to 4 minutes, or until softened. Add the tomato sauce (carefully, as the liquid may splatter), broth, and reserved pasta cooking water; season with salt and pepper. Stir to combine. Heat to boiling on high.

4 Finish the soup & serve your dish

Once boiling, reduce the heat to a simmer. Carefully add the beans (including the liquid) and spinach; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until the beans are heated through and the spinach is wilted. Turn off the heat; stir in the cooked pasta and remaining parmesan. Taste, then season with salt and pepper if desired. Serve the finished soup topped with the spicy ricotta. Enjoy!
