This vibrant salad features seasonal ingredients like sweet tomatoes and juicy peach tossed with arugula, crunchy cucumbers and almonds, creamy mozzarella, and a bright lemon-fig dressing.

Wash and dry the fresh produce. Halve, pit, and thinly slice the peach. Halve the tomatoes. Halve the cucumbers lengthwise, then thinly slice crosswise. Medium dice the mozzarella. Halve the lemon crosswise; squeeze the juice into a large bowl, straining out the seeds. Add the fig spread and a drizzle of olive oil; season with salt and pepper. Stir to combine.
To the bowl of dressing, add the sliced peach, halved tomatoes, sliced cucumbers, diced mozzarella, arugula, and a drizzle of olive oil. Season with salt and pepper; toss to combine. Serve the salad garnished with the almonds. Enjoy!
