This quick, easy salad highlights tangy feta cheese marinated with lemon, honey, and red pepper flakes for a spicy-sweet kick. It's perfectly balanced by a simple mix of arugula, tomatoes, and golden raisins.

Wash and dry the fresh produce. Halve the tomatoes. Using a zester or the small side of a box grater, finely grate the lemon to get 2 teaspoons of zest. Halve the lemon crosswise; remove the seeds. In a large bowl, combine the lemon zest, feta (crumbling before adding), honey, the juice of 1 lemon half (you will have extra), a drizzle of olive oil, and as much of the red pepper flakes as you’d like, depending on how spicy you’d like the dish to be. Season with salt and pepper; stir to combine. Set aside to marinate, stirring occasionally, 10 minutes.
To the bowl of marinated feta, add the arugula, halved tomatoes, and raisins; toss to combine. Enjoy!
