This bold fried rice features a duo of traditional Korean ingredients—kimchi, a fermented vegetable side dish, and gochujang, a spicy chile paste that lends a bit of heat to crispy white rice, eggs, and more. Bright snow peas plus a sprinkling of sesame seeds add satisfying crunch to the dish.

Wash and dry the fresh produce. Thinly slice the mushrooms. Medium dice the bacon. If desired, remove the tough strings from the snow peas. Crack the eggs into a bowl; season with salt and pepper. Beat until smooth. Heat a large pan (nonstick, if you have one) on medium-high until hot. Add the diced bacon. Cook, stirring occasionally, 2 to 3 minutes, or until lightly browned. Carefully drain off and discard any excess fat from the pan. Add the sautéed aromatics (carefully, as the liquid may splatter), sliced mushrooms, and snow peas; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until the vegetables are lightly browned and the bacon is cooked through and crispy.
Add the rice, kimchi, soy sauce (carefully, as the liquid may splatter), and as much of the gochujang as you'd like, depending on how spicy you'd like the dish to be. Cook, stirring frequently and breaking the rice apart with a spoon, 2 to 3 minutes, or until thoroughly combined and heated through.
Using a spoon, move the fried rice to one side of the pan. Add a drizzle of olive oil to the other side, then add the beaten eggs. Cook, constantly stirring the eggs, 30 seconds to 1 minute, or until cooked through. Stir to thoroughly combine. Turn off the heat. Serve the finished fried rice garnished with the sesame seeds.
