  • ¼ cup Sour Cream
  • 1 Tbsp Maple Syrup
Prepare & roast the potatoes

Wash and dry the fresh produce. Preheat the oven to 450°F. Wash and dry the fresh produce. Medium dice the potatoes. Transfer to a sheet pan. Drizzle with olive oil and season with salt and pepper; toss to coat. Arrange in an even layer. Roast 20 to 24 minutes, or until lightly browned and tender when pierced with a fork. Remove from the oven. Evenly top with the spice blend and toss to thoroughly coat.

2 Make the maple bacon

Meanwhile, line a separate sheet pan with parchment paper (or foil). Arrange the bacon on the parchment paper in an even layer. Evenly spread or brush the maple syrup onto each piece of bacon. Roast 8 to 12 minutes, or until the bacon is cooked through and crispy. Remove from the oven; transfer to a cooling rack.

Meanwhile, halve the lime crosswise. Halve and pit the avocado. Using a spoon, remove the avocado from the skin, then thinly slice. Place in a bowl; top with the juice of 1 lime half and season with salt and pepper. In a separate bowl, combine the sour cream and the juice of the remaining lime half; season with salt and pepper.
4 Fry the eggs & serve your dish

In a medium pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Crack the eggs into the pan, keeping them separate; season with salt and pepper. Cook 4 to 5 minutes, or until the whites are set and the yolks are cooked to your desired degree of doneness. Turn off the heat. Serve the fried eggs with the maple bacon, roasted potatoes, and seasoned avocado. Serve the lime sour cream on the side. Enjoy!
