Wash and dry the spinach. Peel and roughly chop 2 cloves of garlic. Halve the buns.

In a medium pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the chopped garlic. Cook, stirring constantly, 1 to 2 minutes, or until softened. Add the spinach; season with salt and pepper. Cook, stirring frequently, 3 to 4 minutes, or until wilted. Transfer to a bowl. Add the mascarpone, parmesan, and as much of the hot sauce as you’d like, depending on how spicy you’d like the dish to be. Stir to combine. Cover with foil to keep warm. Wipe out the pan.

In the same pan, heat a drizzle of olive oil on medium-high until hot. Crack the eggs into the pan, keeping them separate; season with salt and pepper.
