Remove the honey from the refrigerator to bring to room temperature. Place an oven rack in the center of the oven, then preheat to 300°F. In a large bowl, combine the oats, warming spices, coconut chips, maple syrup, honey (kneading the packet before opening), half the cocoa powder (you will have extra), a pinch of salt, and 1/4 cup of olive oil. Stir to combine.

Line a sheet pan with parchment paper. Transfer the granola to the parchment and spread into an even layer. Bake 25 to 30 minutes, or until slightly crispy and toasted. Remove from the oven.
