    Prepare the spinach & cook the sausage

    Wash and dry the spinach. In a large, high-sided pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the sausage; break the meat apart with a spoon. Cook, without stirring, 5 to 6 minutes, or until browned. Add the chipotle paste and tomato paste. Cook, stirring frequently, 1 to 2 minutes, or until combined. Add 2 tablespoons of water (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until combined and the sausage is cooked through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the béchamel, spinach, 1/2 cup of water (carefully, as the liquid may splatter), and half the cheddar and monterey jack (you will have extra); season with salt and pepper. Cook, stirring constantly, 30 seconds to 1 minute, or until combined and the spinach is wilted. Add the pasta; season with salt and pepper. Cook, stirring frequently, 1 to 2 minutes, or until the pasta is heated through and the cheese is melted. Turn off the heat.
