    • ½ lb Grape Tomatoes
    • 2 Bell Peppers
    • 2 Tbsps Smooth Peanut Butter Spread
    • 4 tsps Chipotle Chile Paste
    • 1 cup Sour Cream
    • 2 Tbsps Light Brown Sugar
    • 4 Tbsps Tomato Paste
    • ⅔ cup Crispy Onions
    Prepare the ingredients
    1 Prepare the ingredients

    Wash and dry the fresh produce. Halve the tomatoes. Cut off and discard the stems of the peppers. Halve lengthwise; remove the ribs and seeds, then medium dice. In a bowl, combine the tomato paste, peanut butter spread, sugar, 1/2 cup of water, and as much of the chile paste as you’d like, depending on how spicy you’d like the dish to be. In a separate bowl, combine half the sour cream (you will have extra) and 4 teaspoons of water; season with salt and pepper.

    2 Make the vegetable rice

    In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the halved tomatoes and diced peppers; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly softened. Add the rice; season with salt and pepper. Cook, stirring occasionally and breaking the rice apart with a spoon, 1 to 2 minutes, or until combined and the rice is heated through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the beef; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 3 to 4 minutes, or until lightly browned. Carefully drain off and discard any excess oil. Add the chipotle-peanut mixture (carefully, as the liquid may splatter). Cook, stirring frequently, 2 to 3 minutes, or until combined and the beef is cooked through. Turn off the heat. Taste, then season with salt and pepper if desired. Serve the vegetable rice topped with the cooked beef, seasoned sour cream, and crispy onions. Enjoy!
