Wash and dry the fresh produce. Halve the tomatoes. Cut off and discard the stem of the pepper. Halve lengthwise; remove the ribs and seeds, then medium dice. In a bowl, combine the tomato paste, peanut butter spread, sugar, 1/4 cup of water, and as much of the chile paste as you’d like, depending on how spicy you’d like the dish to be. In a separate bowl, combine half the sour cream (you will have extra) and 2 teaspoons of water; season with salt and pepper.
In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the halved tomatoes and diced pepper; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly softened. Add the rice; season with salt and pepper. Cook, stirring occasionally and breaking the rice apart with a spoon, 1 to 2 minutes, or until combined and the rice is heated through. Transfer to a bowl and cover with foil to keep warm. Wipe out the pan.
In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the pulled pork; season with salt and pepper. Cook, stirring frequently and breaking the meat apart with a spoon, 1 to 2 minutes, or until lightly browned. Add the chipotle-peanut mixture (carefully, as the liquid may splatter). Cook, stirring frequently, 2 to 3 minutes, or until combined and the pork is heated through. Turn off the heat. Taste, then season with salt and pepper if desired. Serve the vegetable rice topped with the cooked pork, seasoned sour cream, and crispy onions. Enjoy!
