These delicious flatbreads get a few Middle Eastern-style twists from hearty pitas, a harissa-spiced tomato sauce, and a sprinkle of herby za'atar over the onion and melty cheese.

Place an oven rack in the center of the oven; preheat to 450°F. Halve and peel the onion; thinly slice into rounds (separating the layers). In a bowl, combine the tomato sauce and harissa paste; season with salt and pepper.
Lightly oil a sheet pan. Place the pitas on the sheet pan; evenly top with the harissa sauce (you may have extra), cheese, and onion rounds. Season with salt, pepper, and as much of the za’atar as you’d like. Bake 10 to 12 minutes, or until the cheese is melted and the pitas are slightly crispy. Remove from the oven and let stand at least 2 minutes. Transfer to a cutting board; cut into equal-sized wedges. Serve the flatbreads drizzled with the honey. Enjoy!
