This delicious warm apple cobbler—spiced with our warming blend of nutmeg, ginger, white pepper, and cloves (known as quatre épices, or four spices) is finished with a crumbly biscuit topping for delightful texture contrast.

Place an oven rack in the center of the oven, then preheat to 375°F. Wash and dry the apples; medium dice, discarding the cores. In a medium pan (nonstick, if you have one), heat the butter on medium until melted. Add the diced apples and brown sugar. Cook, stirring occasionally, 4 to 5 minutes, or until slightly softened. Add the quatre épices and 1 tablespoon of the cornstarch (you will have extra). Cook, stirring frequently, 30 seconds to 1 minute, or until thoroughly combined and the liquid is slightly thickened. Turn off the heat.
In a bowl, combine the biscuit mix, granulated sugar, and 1/4 cup of water. Using your hands, form the topping into large crumbs.
Transfer the filling to four small ramekins (or an 8-inch by 8-inch baking dish). Evenly top with the crumb topping. Drizzle with olive oil.
Bake the cobbler 15 to 20 minutes (ramekins) or 20 to 25 minutes (baking dish), or until the topping is golden brown and the inside is bubbly. Remove from the oven and let stand at least 5 minutes before serving. Enjoy!
