  • 4 oz Applewood Smoked Uncured Bacon
  • 2 Pasture-Raised Eggs
  • 2 oz Shredded Cheddar & Monterey Jack Cheese Blend
  • ½ cup Biscuit Mix
  • 2 Tbsps All-Purpose Flour
  • 1½ tsps Calabrian Chile Paste
  • 2 Tbsps Mayonnaise
  • 2 Tbsps Crème Fraîche
  • 1 Tbsp Everything Bagel Seasoning (Poppy Seeds, White Sesame Seeds, Black Sesame Seeds, Dried Minced Garlic, Dried Minced Onion & Coarse Salt)
Prepare the biscuits
1 Prepare the biscuits

Place an oven rack in the center of the oven; preheat to 400°F. In a medium bowl, whisk together the crème fraîche and 2 tablespoons of water until combined. Add the biscuit mix, everything bagel seasoning, and flour. Stir to combine.

2 Bake the biscuits & bacon

Line a sheet pan with parchment paper. Scoop 2 equal-sized dollops of the biscuit dough onto one side of the sheet pan. Arrange the bacon in an even layer on the other side. Bake 12 to 14 minutes, or until the biscuits are set and the bacon is cooked through and crispy. Remove from the oven. Let the baked biscuits stand at least 5 minutes. Transfer the cooked bacon to a paper towel-lined plate.

3 Make the Calabrian mayo

Meanwhile, in a bowl, combine the mayonnaise and as much of the chile paste as you’d like, depending on how spicy you’d like the dish to be.

4 Fry the eggs & serve your dish

While the biscuits rest, in a medium pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Crack the eggs into the pan, keeping them separate; season with salt and pepper. Cook 4 to 5 minutes, or until the whites are set and the yolks are cooked to your desired degree of doneness. Turn of the heat. Evenly top the eggs with the cheddar and monterey jack. Cover the pan with a lid or foil to allow the cheese to melt, about 2 minutes. Carefully halve the baked biscuits horizontally. Assemble the sandwiches using the halved biscuits, Calabrian mayo, cooked bacon, and cheesy fried eggs. Enjoy!
