Prepare the ingredients & make the base

Place an oven rack in the center of the oven; preheat to 450°F. Wash and dry the spinach. In a bowl, whisk together the cream (shaking the packet before opening), romesco sauce, 2 tablespoons of the tomato paste (you will have extra), and 1/2 cup of water; season with salt and pepper. In the tray, combine the spinach, gnocchi, and creamy romesco sauce. Season with salt and pepper; stir to thoroughly combine.

Bake the tray & serve your dish

Add the sausage in an even layer (tearing into bite-sized pieces before adding). Season with 1/4 of the spice blend (you will have extra). Tightly cover the tray with foil and bake 30 to 32 minutes, or until the sausage is cooked through. Remove from the oven. Carefully remove the foil; stir to combine. Serve the baked tray garnished with the parmesan. Enjoy!
