Ingredients

Shredded Cheddar & Monterey Jack Cheese Blend

Crème Fraîche

Tomato Paste

Note: Measurements are for 2 serving recipes.
Instructions
step 1
Prepare the ingredients & make the base
Preheat the oven to 450°F. Wash and dry the fresh produce. Lightly coat the tray(s) with a drizzle of olive oil. In the prepared tray(s), combine the peppers (tearing into bite-sized pieces before adding), tomatoes, corn, tomato paste, and gnocchi. Add 1/2 cup of water to the tray (or to each tray for 4 servings). Season with salt and pepper; stir to thoroughly combine.

step 2
Add the sausage & bake the tray
Add the sausage (tearing into bite-sized pieces before adding) in an even layer. Tightly cover the tray(s) with foil and bake 30 minutes, or until the sausage is cooked through. Leaving the oven on, remove from the oven.

step 3
Add the cheese & serve your dish
Carefully remove the foil. Add the crème fraîche; carefully stir to combine. Add half the cheddar and monterey jack (you will have extra) in an even layer. Return to the oven and bake, uncovered, 5 to 7 minutes, or until the cheese is melted. Remove from the oven. Let stand at least 3 minutes before serving. Enjoy!
