Make the sauce

Remove the noodles from the refrigerator to bring to room temperature. Preheat the oven to 450°F. Wash and dry the fresh produce. In a small baking dish (or large for 4 servings), whisk together the miso paste, sautéed aromatics, soy-miso sauce, and 1/4 cup of water (or 1/2 cup for 4 servings); season with salt and pepper.

Using your hands, carefully separate the noodles. To the sauce, add the spinach, mushrooms (tearing into bite-sized pieces before adding), and noodles. Season with salt and pepper and stir to thoroughly combine. Add the pork (tearing into bite-sized pieces before adding) in an even layer. Season with salt and pepper. Tightly cover with foil and bake 22 to 25 minutes. Carefully remove the foil and continue to bake 5 to 7 minutes, or until the pork is cooked through. Remove from the oven and stir to thoroughly combine. Let stand at least 2 minutes before serving. Serve the baked dish garnished with the sesame seeds. Enjoy!
