  • 2 oz Arugula
  • 4 oz Grape Tomatoes
  • 3 oz Radishes
  • 2 Scallions
  • ½ oz Pickled Peppadew Peppers
  • 2 oz White Cheddar Cheese
  • ¼ cup Sour Cream
  • 1 oz Goat Cheese
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Everything Bagel Seasoning (Poppy Seeds, White Sesame Seeds, Black Sesame Seeds, Dried Minced Garlic, Dried Minced Onion & Coarse Salt)
1 Prepare the ingredients

Wash and dry the fresh produce. Halve the radishes lengthwise, then thinly slice crosswise; place in a large bowl. Add the vinegar and season with salt and pepper. Set aside to marinate, stirring occasionally. Thinly slice the scallions, separating the white bottoms and hollow green tops. Halve the tomatoes. Grate the cheddar on the large side of a box grater. Roughly chop the peppers.

2 Make the cheese crisps

Heat a large pan (nonstick, if you have one) on medium-high until hot. Add the grated cheddar in an even layer. Evenly top with the sliced green tops of the scallions and enough of the everything bagel seasoning to coat (you may have extra). Cook, without stirring, 8 to 10 minutes, or until the cheese is melted, lightly browned, and crispy at the edges. Transfer to a plate; let cool about 1 minute, then break up into bite-sized pieces.

3 Finish & serve your dish

Meanwhile, in a bowl, combine the goat cheese (mashing with a fork), sour cream, a drizzle of olive oil, and 2 tablespoons of water. Season with salt and pepper; stir to combine. To the bowl of marinated radishes, add the spinach, arugula, halved tomatoes, and sliced white bottoms of the scallions. Season with salt and pepper; toss to combine. Serve the salad drizzled with the goat cheese dressing. Garnish with the cheese crisps and chopped peppers. Enjoy!
