    Wash, dry, and halve the tomatoes. Roughly chop the olives.

    2 Cook the rice & vegetables

    In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the halved tomatoes; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly softened. Add the rice, chopped olives, and currants; season with salt and pepper. Cook, stirring frequently and breaking the rice apart with a spoon, 1 to 2 minutes, or until combined and heated through. Transfer to a bowl; cover with foil to keep warm. Wipe out the pan.

    In the same pan, heat a drizzle of olive oil on medium-high until hot. Add the tomato paste and romesco sauce (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring frequently, 30 seconds to 1 minute, or until combined. Add the pulled chicken (tearing the pieces apart before adding) and 4 tablespoons of water (carefully, as the liquid may splatter); season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until combined and heated through. Turn off the heat. Serve the cooked rice and vegetables topped with the cooked chicken. Garnish with the feta (crumbling before adding). Enjoy!
